Ingredients
  

  • 1 lb . ground pork sausage (I prefer Country Mild, but hot sausage works great if you like a bit of spice)
  • ½ lb . bacon
  • ½ cup finely-diced green bell pepper
  • ½ cup finely-diced onion
  • 2 cups grated sharp cheddar cheese
  • 6 large eggs
  • 3 cups whole milk (or substitute with heavy cream for a richer casserole)
  • 1 cup Bisquick (or any all-purpose baking mix)
  • ½ cup salted butter, melted
  • Optional garnish: sliced green onions or fresh herbs such as parsley or chives

Instructions
 

  • Start by heating a large skillet over medium-high heat. Once hot, add the ground pork sausage and cook it until it's no longer pink. Be sure to break the sausage apart as it cooks for an even texture. Once cooked, drain off any excess grease, and transfer the sausage to your prepared 9 x 13-inch baking dish.
  • Next, in the same skillet, add your bacon and fry it until it's crispy. Once done, remove the bacon from the skillet and place it on a paper towel-lined plate to drain. Once it's cool enough to handle, crumble or chop the bacon into small pieces. Add both the bacon and sausage to the baking dish, along with finely diced bell pepper, onion, and grated cheddar cheese. Stir everything together for a well-mixed base layer.
  • In a large bowl, whisk together the eggs, milk (or heavy cream), Bisquick, and melted butter. The Bisquick will help bind the ingredients together, giving the casserole a light, fluffy texture. Make sure to whisk thoroughly until the mixture is smooth and no lumps remain.
  • Once mixed, pour this egg mixture evenly over the sausage, bacon, vegetables, and cheese in the baking dish. Use a spatula to ensure the mixture is spread out evenly, covering all the ingredients.
  • At this point, you can cover the casserole with plastic wrap or aluminum foil and refrigerate it overnight. Allowing the casserole to sit overnight helps the Bisquick to soak into the other ingredients, resulting in a richer and more flavorful dish. If you’re in a rush, you can bake it immediately, but the overnight resting period truly makes a difference!
  • Before baking, remove the casserole from the refrigerator and let it sit on the counter for 30-60 minutes. Allowing it to come to room temperature helps the casserole bake more evenly and prevents it from being too cold when you pop it in the oven. This step ensures the egg mixture sets properly without overcooking the edges.
  • While the casserole is warming up, preheat your oven to 350°F (175°C). This temperature will help cook the casserole evenly while giving the top a nice, golden-brown color.
