For the Avocado-Tomato Salsa
- 1 large avocado, peeled, pitted, and diced
- ½ cup diced seeded tomatoes (from 1–2 tomatoes)
- 1 small shallot, minced (about 2 tablespoons)
- 1 clove garlic, minced
- 1 jalapeño pepper, seeded and minced
- 1 tablespoon fresh lime juice (from 1 lime)
- ½ teaspoon salt
- ¼ teaspoon ground cumin
- ¼ cup fresh chopped cilantro
For the Burritos
- 4 large eggs
- ¼ teaspoon smoked paprika
- ¼ teaspoon salt
- ½ lb spicy sausage (chorizo, Italian sausage, or your favorite type), casings removed
- 1⅓ cups (6 oz) shredded Monterey Jack cheese
- 4 (10-inch) burrito-size flour tortillas
- Vegetable oil (for cooking)
Assembling the Burritos
Place the burrito-sized flour tortillas flat on a clean surface, like a countertop or large cutting board.
Spoon about ¼ cup of the avocado-tomato salsa onto the center of each tortilla. Spread it out slightly, but keep it in the middle to avoid spilling when rolling.
Add a quarter of the cooked sausage, a quarter of the scrambled eggs, and about ⅓ cup of shredded Monterey Jack cheese onto each tortilla.
Fold in the sides of the tortilla over the filling, then roll it up tightly, tucking the edges as you go to create a secure wrap.
Cooking the Burritos
Lightly coat your cleaned pan with a thin layer of vegetable oil and set it over medium heat.
Place the burritos in the pan, seam side down, and cover the pan. Cook for about 3 minutes, or until the bottoms turn golden brown and crisp.
Flip the burritos over and continue cooking, covered, for another 2–3 minutes until the other side is golden and the cheese inside is melted.
Transfer the burritos to plates and serve immediately for a warm and satisfying breakfast.
Make-Ahead Tips
You can assemble the burritos a few hours in advance. Wrap them tightly in plastic wrap and refrigerate until ready to cook.
Wrap leftovers in foil and reheat in a 350°F oven for about 15 minutes. While they won’t be as crisp as freshly made, they’ll still be delicious!
