  • To ensure even cooking, place the chicken breasts between two sheets of parchment paper or plastic wrap. Use a rolling pin, meat mallet, or even your fist to pound the chicken to a uniform thickness of about 1.5 cm (0.6 inches) at the thickest part. This step not only promotes even cooking but also makes the chicken more tender.
  • In a small bowl, combine brown sugar, paprika, oregano (or thyme), garlic powder, salt, and pepper. This simple spice blend will coat the chicken with bold flavors and a touch of sweetness.

Preparing the Baking Tray

  • Cover your baking tray with foil, then layer it with parchment paper. This prevents sticking and makes cleanup a breeze.
