What is Emulsification?

The culinary process of combining two immiscible liquids—most commonly water and fat/oil—into a stable, uniform suspension. Emulsification is achieved through vigorous whisking, blending, or shaking in the presence of natural emulsifiers such as lecithin (egg yolks), mustard, or honey that prevent the droplets from separating.
